Building an online store from scratch
Building a store from scratch differs from migrating an existing one mainly because nobody has had the chance to lay the catalogue structure down wrong yet. That is an advantage: we can design the category tree and attribute set so that it still holds up when the range triples.
The second thing settled at the start is how prices and stock behave. Where prices come from, how often they change, whether volume discounts apply, how availability is calculated. The answers shape the architecture more than the design does.
